Ingredients
- 250g cherry tomatoes
- 200g block feta cheese
- 300g pasta
- 3 garlic cloves, crushed
- 4 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp chilli flakes (optional)
- Salt and black pepper
- Fresh basil leaves
- Juice of half a lemon
Method
Step 1 — Prepare the Baking Dish
Preheat your oven to 200°C (180°C fan).
Add the cherry tomatoes to a large oven dish and place the block of feta cheese in the centre. Scatter over the garlic, oregano and chilli flakes.
Drizzle generously with olive oil and season lightly with black pepper.
Step 2 — Bake Until Golden & Soft
Bake in the oven for 30–35 minutes until the tomatoes have burst and softened and the feta is golden and creamy.
The roasted tomatoes and olive oil will combine to create the base of the sauce.
Step 3 — Cook the Pasta
While the feta is baking, bring a large saucepan of salted water to the boil and cook the pasta according to packet instructions until al dente.
Reserve a splash of pasta water before draining.
Step 4 — Create the Sauce
Remove the baking dish from the oven and use a spoon to gently mash the feta and tomatoes together until smooth and creamy.
Add a splash of reserved pasta water if needed to loosen the sauce.
Stir through the lemon juice and fresh basil.
Step 5 — Combine & Serve
Add the cooked pasta directly into the baking dish and toss until fully coated in the creamy feta sauce.
Serve immediately with extra basil, cracked black pepper and an extra drizzle of olive oil if desired.
Chef’s Tip
For extra flavour, roast red onion or red peppers alongside the tomatoes. You can also add grilled chicken, spinach or prawns for an easy variation.
Using good-quality olive oil makes a noticeable difference in the richness of the finished sauce.
